# Packed full of nourishment, these small red, oval beans are high in protein as well as complex carbohydrates and iron. In addition, Adzuki Beans (also known as aduki beans) offer a great deal of fiber, folate, potassium and phosphorous. Similar in taste to red beans, Adzuki beans can be used in place of red or pinto beans in a variety of recipes. Cook them into soups, boil them for tea or sprout them.
