My Spinach is Bolting Pesto
[meaning you have way too much spinach and have to use it immediately]
(with extra for freezing or split in half for just immediate use)
2 cups walnuts
2-4 cloves of garlic
1 raw onion
4 cups spinach
1/3 cup olive oil
sea salt to taste
blend all ingredients in food processor
freeze half in ice cube trays or small size containers. Later transfer to plastic for easy defrosting and use with pasta, eggs, toast, quesadillas or whatever your stomach desires.
