Gratitude Pesto Rendition
It’s time for pesto!!! ( adapted from “I am Graceful” by Terces Engelhart)
Makes 1-1/2-2 cups
1 tablespoon chopped garlic
3/4 teaspoon salt
3 bunches basil (leaves only)
3/4 cup of olive oil
1 tablespoon lemon juice
1/4 cup almond butter
or
1 cup hemp seeds
or
walnuts
or mixture of any of the above
Place all ingredients except for the almond butter or hemp seeds in the bowl of a food processor fitted with the “S” blade. Pulse and scrape down sides of bowl until all the ingredients have reached a pretty smooth texture. While running, add the nut butter or seeds.
Stores well in air tight container in the fridge, or like my mom does, freeze in ice cube trays, when frozen place in a freezer bag for easy defrosting later!
