Quick and easy mid winter salad
So you need something quick and easy, also warm and filled with nutrients? Give this recipe a try:
1.5-2 Tbs olive oil
Half of red onion chopped
1 TBS of papaya seeds or 1/4 tsp of black pepper
1/4 tsp coriander spice
1 cup sprouted adzuki beans# or other small beans (can swap in cooked beans)
1 TBS soy sauce or liquid amino acid
2 cups chopped string beans
1 head of lettuce
1/4 cup of corn, cut from cob or can
1tbs agave
1tsp lemon juice
1/8 tsp of cayenne pepper
1. Heat oil in pan and sauté chopped onion and papaya seeds or black pepper, add coriander, until onions begin to turn translucent, add sprouts, sauté a few more minutes with soy sauce.
2. Chop and was string beans, steam until soft, drain off water.
3. Chop lettuce and add corn.
4. Combine all ingredients with agave, lemon juice and cayenne pepper.

In addition, Adzuki Beans (also known as aduki beans) offer a great deal of fiber, folate, potassium and phosphorous. Similar in taste to red beans, Adzuki beans can be used in place of red or pinto beans in a variety of recipes. Cook them into soups, boil them for tea or sprout them.
*All ingredients can be chopped before hand to make preparation time quicker.
