Memorial Day Specials: Quinoa Salad and Smoothie
Mosaic Quinoa Salad
Light and refreshing protein full salad
2 cups quinoa cooked as directed with a drop of olive oil and sea salt
1/2 cup chickpeas soaked over night and cooked or a can of chickpeas
3 small cucumbers peeled and chopped
2 tbs fresh thyme chopped
A few leaves of basil chopped
1 large slice of onion chopped or a whole green onion/scallion chopped
1 avocado peeled and diced
Toss with olive oil, sesame oil and sea salt and a capful or two of balsamic vinaigrette
So Hot Smoothie
Serves 4-6
Couple handfuls of kale off stem and ripped to smaller pieces
Cup of diced pineapple or small can plus juice
Half of a pear chopped
5 ice cubes ( or use froZen pineapple)
Cup of frozen blueberries or any berries
Place all ingredients in blender cover with half water and half milk alternative
Agave to sweeten (optional)
Blend well and serve
