Zucchini Bread! Gluten Free
Ate this for breakfast all week 🙂
2 heaping Tablespoons of ghee
1 heaping Tablespoon coconut oil
2 cups shredded zucchini
2.5 cups buckwheat flour
1/4 cup flax powder
Splash of oil
1/2 t baking soda
1/4 t salt
1/2 t cinnamon
2 cups hemp milk
1.5 mushy bananas
1 egg (could try using more banana, I had an egg, it worked)
1 t vanilla
Oil large pan or two loaf pans
Mix dry ingredients seperately from liquid, combine, careful not to over mix,
Pour into loaf pans
Bake at 350 degrees for 30 mins or until fork comes out clean
