Summer Lentil Soup
2 carrots
2 red potatoes
half bunch kale and or dandelions
medium/small red onion
4 cloves garlic
2 cups red lentils
1 t cumin
1 t turmeric
salt
black pepper
8 cups water
2T olive oil
1 bay leaf
Boil water and lentils with pinch of salt and dollop of oil in large pot
While boiling chop all veggies.
Sauté onions in a skillet with oil over medium high heat, add spices, when translucent add carrots.
after two- 3 mins add to boiling lentils, add potatoes, bay leaf and garlic as well.
Season with salt and black pepper.
let re boil then turn fire down to low and let simmer, stirring occasionally.
after about 10 mins add chopped greens, stir.
after about 10 mins, turn off, season to taste.
enjoy, serves 6-8.
