QUICK RAW APPLE PIE and KALE CARROT with ALMONDS salad

My best friend just had a baby and so in honor of the baby’s first couple of days back on this earth we are gonna eat raw pie!

Ingredients

Crust:

1/2 cup dried shredded coconut

5-6 medjool dates pitted

pinch of himalayan salt (optional)

2 mini pie pans or silicon cupcake moulds

Apple and cinnamon filling:

2/3 c chopped apple

1/3 cup chopped banana

2 dates

1 T chia seeds or psyllium husks (I used flax powder to give more gelatinized consistency

1 t cinnamon

Directions

In a food processor throw all of the crust ingredients and pulse until a firm dough consistency is formed.

Using your hands, mould the dough into the pie moulds and place into the freezer to set whilst preparing the filling.

Throw all of the apple-cinnamon filling mixture either into the food processor and process until a desired consistency  is achieved or use a blender for a smoother consistency.  You may need a small amount of water or shake the food processor as I did.

Pour the mixture onto the pie crusts and sit in the freezer until set or you can eat as they are.

Garnish with extra apple and cinnamon.

KALE SALAD

Make as much or little as you want

ingredients

a few cloves of chopped garlic

liquid aminos

olive oil

tahini

Carrot shredded (1 -2)

Almonds (soaked a few hours) and pulsed in food processor

if making a small amount 3 cloves of garlic, 2 – 3 T of aminos 3 T of Oil and a large T of tahini should work.  Blend well

de steming a bunch of Kale wash, and put into a bowl of water.  Breaking and massaging into small pieces

mix in shredded carrots and almond bits to kale

Add sauce and massage with hands

enjoy!

you can add more or less sauce depending on how you like the consistency, I usually just pour in everything and duple the tahini in multiple helpings and enjoy with a lot of kale.
