Chia Seed Pudding
“Thousands of years ago, chia seed was a staple in the diets of ancient Mayans and Aztecs. The word chia is derived from the Mayan language, meaning “strength,” and Aztec warriors relied on chia seed to boost energy and increase stamina. Today this tiny seed is a favorite of athletes, especially distance runners, who tout it as an endurance enhancing superfood.”
Handful of chia seeds
2 cups or so of milk and juice, (I used hemp milk and apple juice)
additions of choice, I used 2 tbs of shredded coconut, a tsp of bee pollen and a tbs of dried cranberries.
Other ideas: ground flax, nuts, fruit, sweetener…
Add more liquid if you use a lot of additions
Blend well, starting slowly and increasing speed until chia seeds are fully ground, lower speed back to off position.
Pour into container and cover. Place in refrigerator overnight or for a few hours.
Chia seeds will solidify making a pudding/yogurt textured meal or snack.
