Gluten Free Carrot Muffins with Goji Berries
Extra carrots, make these yummy healthy muffins:
INGREDIENTS
1/2 cup gluten free flour
1⁄2 teaspoon celtic sea salt
1⁄2 teaspoon baking soda
1 teaspoon cinnamon, ground
6 eggs
1⁄2 safflower oil
1⁄2 cup honey or agave syrup
1 tablespoon vanilla extract
2 cup carrots, grated
1⁄4-1/2 cup goji berries or raisons
DIRECTIONS
In a medium bowl, combine flour, salt, baking soda and cinnamon.
In a large bowl, blend together eggs, oil, agave or honey and vanilla.
Blend dry ingredients into wet, then fold in carrots and goji berries or raisons.
Grease with oil and then dust with flour or line muffin tin.
Spoon approximately 1/4 cup of batter into each greased or lined muffin cup.
Bake at 350° for 15-17 minutes.
Cool and serve. Eggs and Kale with tomatoes were good partners for breakfast.
